  • 2 tablespoons oil
  • 1 onion, chopped
  • 450g minced beef
  • 1 1/3 (400g) tins kidney beans with liquid
  • 1 1/4 (432g) tins pineapple chunks with juice
  • 250ml tomato ketchup
  • 110g dark brown soft sugar
  • 1 tablespoon cornflour
  • 2 teaspoons ground mustard powder
  • 1 teaspoon salt

  1. Preheat an oven to 180 C / Gas 4.
  2. Heat the oil in a frying pan over medium heat; cook the onion in the hot oil until softened, about 5 minutes. Crumble the minced beef into the frying pan and cook and stir until completely browned, 5 to 7 minutes. Drain.
  3. Stir the kidney beans with liquid, pineapple with juice, tomato ketchup, dark brown soft sugar, cornflour, mustard powder and salt together in a large bowl. Add the minced beef and onions to the mixture and stir to coat. Pour into a large casserole dish.
  4. Bake in the preheated oven until completely heated through, about 45 minutes.

I have used this recipe for the last 36 years, was given to me at my bridal shower. I omit the juice off the pineapple as it tends to be too sweet. As we are diabetic, I use 1/4 cup brown sugar substitute. Sometimes I add sliced hot dog to it also. I usually get asked to bring this to pot-luck dinners, make it for camping etc. My husband loves it cold.-29 Apr 2010

This was fantastic. We also used crushed pineapple. It was a bit thin. I think it could have used less syrup from the canned pineapple, but it was still great. Even my VERY picky 5 year old liked it. It's also great the next day.-27 Apr 2010

Great, my family loved it. Easy to make and wonderful to eat. I made a double recipe and used crushed pineapple for one of the cans. We think that the flavor is better with the crushed but also like to see the chunks. Use both.-24 Apr 2010


Mexican Beef and Bean Casserole

This casserole combines everything I love about Mexican food. Beef, beans, salsa, and cheese! What more could a person need?

Ingredients

  • 1 pound Lean Ground Beef
  • 2 cans (16 Oz Each) Pinto Beans
  • 1 can (8 Oz. Can) Tomato Sauce
  • ½ cups Mild Or Medium Chunky Style Salsa
  • 1 teaspoon Chili Powder
  • 2 cups Shredded Colby-jack Cheese

Preparation

1. Heat oven to 375 degrees Fahrenheit.
2. Brown the ground beef over medium heat when it’s browned, drain grease.
3. Rinse and drain beans in a strainer.
4. Mix beef, beans, tomato sauce, salsa, and chili powder in an ungreased baking dish.
5. Cover with lid (or aluminum foil) and bake for 40 minutes.
6. Remove the lid (or aluminum foil) and sprinkle cheese on top.
7. Continue baking uncovered for about 5-10 minutes, or until cheese is melted.

Preheat oven to 350 degrees F (175 degrees C).

In a large skillet over medium heat, fry the ground beef, bacon and onion together until ground beef is no longer pink. Drain fat.

In a large mixing bowl, combine the kidney beans, baked beans with pork and butter beans. Stir in the ketchup, white vinegar, dry mustard, brown sugar and cook beef mixture. Mix thoroughly, adding salt and pepper to taste.

Pour the bean and meat mixture into a 9x13 inch baking dish. Bake in preheated oven for 30 to 40 minutes.


  1. Preheat oven to 160°C. Season beef with salt and pepper. Pan fry in batches in hot olive oil until browned all over, remove and place in a casserole dish.
  2. Fry onion, capsicum and garlic in olive oil until onion has partially softened and garlic is fragrant. Season with 2 pinches of salt and a grind of black pepper.
  3. Mix tomato paste with beef stock and flour - make a smooth paste and pour into casserole dish.
  4. Add tomatoes, sundried tomatoes and dried herbs.
  5. Cover with a disc of baking paper (cartouche), press down onto the meat and liquids (this will help trap and develop the flavours as it cooks). Cover with a tight-fitting lid and cook for 3 hours.
  6. Adjust seasoning to taste. Add cannellini beans, olives and fresh herbs.
  7. Serve with fresh toasted ciabatta or creamy polenta.

Absolutely Delicious, Skinny Beef and Bean Enchilada Casserole


Forget all the tortilla rolling, I’ve got a skinny twist that’s easy to assemble and really, really good. This casserole has many of the same ingredients of a classic enchilada and some updated skinny ones too. For example, instead of adding a large amount of high-fat cheese, I’m adding fat-free cottage cheese to the layers and only topping with ½ cup of shredded reduced-fat cheese. The cottage cheese adds a rich, cheesy flavor. In addition, I’m using fat-free sour cream and very lean, ground beef. The skinny for 1 serving, 285 calories, 4 grams of fat and 5 Blue WW Freestyle SmartPoints,and 7 Green.Best of all, this Mexican-style dish is loaded with flavor!

Prep Time: 25 minutes (includes browning the beef)
Cook Time: 35 minutes


Ingredients for Enchiladas:

8 ounces (½ of a 1-pound package) extra lean ground beef, I used Trader Joe’s 96/4, see healthy benefits or lean ground turkey

1 (15-oz) can black beans, rinsed and drained

1 (4-oz) can Fire Roasted Diced Green Chiles, see shopping tips

1 cup fat-free sour cream or non-fat Greek yogurt

½ cup fresh corn kernels (cut from 1 cob) or ½ cup frozen and thawed

¼ cup fat-free cottage cheese

8 (6-inch) Mission yellow corn tortillas, extra thin, see shopping tips

1 (10-oz) can enchilada sauce, see shopping tips

Ingredients for Topping:

½ cup shredded reduced-fat cheddar cheese


Instructions

1. Preheat oven to 350 degrees. Coat a 9” square pan with cooking spray. Glass or metal pan is fine.

2. In a large nonstick pan, cook the beef, onions, garlic, chili powder, and cumin over medium-high heat until onions are tender and beef is no longer pink. Stir often, breaking up the beef. Stir in black beans, undrained chile peppers, and mix well. Remove from heat and set aside.

3. In a small bowl, stir together sour cream, corn, cottage cheese, and garlic powder.

4. Place 4 tortillas, overlapping on the bottom of pan. Top with half the meat mixture, half the sour cream mixture, and half the enchilada sauce. Reserve topping ingredients until baked. Repeat layers.

5. Cover casserole with foil. Bake for 30-35 minutes, until heated through. Remove from oven, sprinkle with tomatoes, scallions, and cheese evenly over the top of the casserole. Bake uncovered for about 10 minutes until cheese is melted.

6. Remove from oven and let sit for about 10 minutes to set. Cut into 6 servings. Remove servings with a spatula Note: It holds together even better if baked and refrigerated overnight. Just before serving, heat in a 350-degree oven or microwave until hot. Cut into 6 slices.

Food Facts

White or yellow corn tortillas are pretty interchangeable in most recipes. The main difference between the two is simply the color of the corn from which it is made. In terms of taste, yellow corn tortillas tend to be a little more earthy and rustic, while white tortillas are a little lighter and finely textured.

You’ll find the can of diced Fire Roasted Diced Green Chiles in the Mexican foods aisle where salsa is sold. Trader Joe’s also sells it.

Mission (extra thin) yellow corn tortillas are sold in most supermarkets. They’re only 40 calories each compared to most tortillas at 60 calories. If you can’t find them just use the regular corn tortillas.

Enchilada sauce can be found in the Mexican foods aisle where salsa is sold. There are many types but I used Las Palmas Salsa Para Enchiladas, medium-hot. It’s a red sauce.


Prep Tips

To make ahead, assemble casserole as directed except don’t add the topping ingredients. Cover casserole and refrigerate for up to 24 hours. Before serving, preheat oven to 350. Remove plastic wrap, cover with foil and bake for 35-40 minutes, until heated through. Remove from oven, sprinkle with tomatoes, scallions, and cheese. Bake uncovered for about 10 minutes until cheese is melted.


Storage Tips

This casserole will keep for a few days in the refrigerator and freezes great. To freeze, cut into individual servings and wrap each well, before freezing.

How to Make Ground Beef & Baked Bean Casserole

This casserole is super easy to make. Start with cooking some ground beef in a skillet until no longer pink. In a large bowl, combine the cooked beef with onion, canned Pork & Beans, ketchup, brown sugar, dijon mustard, salt, and black pepper. Pour beef mixture into a casserole dish. Arrange bacon slices on top and bake.

  • I used ground beef, but feel free to substitute ground turkey.
  • You can also use turkey bacon in place of regular bacon. Just make sure to cook it a little bit before adding it on top of the casserole. It won’t fully bake if it is raw.
  • I used dried minced onion flakes. Feel free to substitute fresh onion. If using freshly chopped onion, cook it along with the ground beef.

Never, ever in my life have I cooked something and thrown it away when it was finished, so this was the first. Usually, even if it's not the greatest dish, I will not throw it away since we spent the money for ingredients. I followed the directions to a T and even added additional salt and pepper for additional flavor, but it was terrible. My husband, who will eat everything I make, even agreed we should throw it away. The flavor and texture of the white beans did not blend well at all with the coarse texture of the meat. Overall, it seemed like a lot of interesting flavors, but they did not blend well together.

My husband and i loved this! If you and your family are tired of the same old stuff this is the perfect recipe!! I cooked it in a skillet and then put it in a casserole dish, we couldn't figure out if we were suppose to add water to the stuffing so we put it around the casserole dish, then put the mixture in the middle,put it in the oven for 15 mins, pulled it out and added a little water around the stuffing. next time i will add more cheese. hope this helps!

I have a very picky family, so I had to substitute Cream of Potato soup for the Mushroom soup, and I added green beans to it and took out the spinach. Other than that, used the recipe as stated and th e family loved it. I will make again.
